I’m not one for mashed potatoes, and since I try not to waste food, and potato skins are food, I have the perfect excuse not to make it. But the people persist in liking it, a fact which was discussed at some length over dinner one night last week. I told them the sad story of how I came to dislike mash (nuns + white pepper), and anyway, how annoying it is to make, and that the only way it would ever become a feature is if I had a potato #ricer. This because a ricer would squash the potatoes from their skins, saving me effort while saving the skins for another use.
Duly, a ricer arrived a few days later, and yesterday I had #fun using my #newtoy. Sure enough, it worked like magic; the potatoes dropping in thin #ribbons into the pan, leaving the bare skins behind. I am #delighted, and the people sense that they will get a decent return on their investment.
Today I made three teeny tiny potato not-quite-cakes from the #leftovers and roasted off the skins in bacon fat for about 15 minutes until they were crispy. #Rocket, roasted peppers, the aforementioned #bacon and a dressing of #balsamic and the roast pepper oil endy bit. It left us wanting more, which was at least as much to do with the lunchtime portions as the tastiness.
